Step 1: Select and track your subject
Select your clip and pick the Object Mask tool in the toolbar. Click the subject in the Program Monitor. Because the subject moves, open Effect Controls and click Track forward and back under the object mask.

To include more than one subject, make sure the add (+) option is enabled, click the other subject, and track the mask again.
Step 2: Duplicate the clip and isolate the subject
Hold Alt (Windows) or Option (Mac) and drag the clip up two tracks to duplicate it. Select the top copy and drag its object mask onto Opacity in Effect Controls. The top layer now shows only the subject. You can remove the mask from the bottom copy so it shows the full shot.

Step 3: Put solid text behind the subject
Select the Type tool and add your text. Drag the text clip onto the empty track between the two video layers. In the text's appearance settings, keep Fill on and Stroke off. The subject now walks in front of the text.

Step 4: Add the outline in front
Duplicate the text clip and move the copy to the top track, above the masked subject. On this copy, turn Fill off and turn Stroke on. Choose the Outer stroke style for the cleanest look and adjust the stroke size. Now the outline of the letters is drawn over the subject while the solid letters stay behind it.

Try different fill and stroke colors for a different style, for example a bright fill with a white outline.
Tips
- Use a heavy font. Thick letters make both the fill and the outline easy to read.
- Keep the two text layers identical. If you change the wording or position, change both copies.
- Add motion. The Ultimate Text Preset Pack has 200+ drag-and-drop text animations for Premiere Pro.
Smoother with EaseFlow: animating the text with keyframes? EaseFlow adds a smooth easing curve in one click. Give both text copies the same curve so the fill and the outline move together. See EaseFlow
FAQ
How do I make text go behind and in front of a subject at the same time?
Use two copies of the text: a solid one between the background and the masked subject, and an outline-only copy on top of everything.
Why can't I see the outline?
Check that the top text copy has Stroke enabled with a size above zero, and that it sits on a higher track than the masked subject.
